I recently had the pleasure of visiting Albuquerque, New Mexico with my husband. He had to be out there for work the week of our second anniversary, so I flew out and spent a few days with him so we could be together to celebrate. While there, we had some of the most amazing dining experiences I can remember at incredibly reasonable prices. I had some trouble finding information about restaurants in Albuquerque, so I wanted to not only commend the restaurants for their excellent service and food but also provide information to others who might be looking for a great meal outside of the usual Southwest cuisine.
Once I was finally able to take a bite, it was everything I'd hoped it would be. The slow cooker mac and cheese chicken was creamy and tangy. The sloppy joe was perfectly spiced. It was a tad greasy, but not too much, and certainly better than the Manwiches I remember eating as a kid. Yes, a crock macaroni cheese and grill my swordfish is no modern invention. The only new thing about it is that it has become very popular now, and that it cooks on electricity instead of on a stove. I am sure many Mums use this method, I know mine did on many occasions. Pureed Soups are fantastic for adding extra vegetables to try and get all those vitamins and minerals into your child. I also add vegetables to a macaroni cheese such as onions, carrots, cauliflower and broccoli although not all at the same time. Cheese sauce does make the vegetables more palatable for children although not very healthy so best only used sparingly! And not just because it's so much fun. This is advice you've heard, but it works. Sneak veggies into otherwise favorite, non vegetable bearing entrees. Do you have a kid who will eat nothing but slow cooker mac and cheese and cheese? I suggest you try dicing up carrots very small (or buying them diced up into small pieces) and mixing them into the mac and cheese. Corn works well too. Inconspicuous choices work best. Green vegetables are easily worked into tomato based sauces. It's amazing what you can work into spaghetti sauce, when it's diced up small enough. Put bananas in the cereal. Make "French fries" out of sweet potatoes (but by all means, bake them, don't fry). OK, I should clarify first. It wasn't the most affordable macaroni and cheese product on the shelf. But, I'm a bit picky when it comes to macaroni & cheese and prefer brands that have actual cheese with them; not powder. This isn't really so much because of taste as much as I hate having to take the time to measure out milk and, in some cases, add butter. So, to be more accurate, this was the most affordable of the brands that fit into that category. We had never ate at the Hollywood and Vine before and did a bit of research before we left. It was an all you can eat buffet with a variety of food from chicken nuggets to steak and salmon. We were excited to go and even though the price seemed a bit high for lunch, around $25.00 a person, we couldn't wait to have our son meet the characters. My family of 5, which includes two adults and three children between the ages of 4 and 8, receives just under $500 per month in food stamps. This equates to approximately $125 per week, or $16 per day. Divide that by 5 people, and you can really appreciate the gravity of that situation. I must feed each member of my family, including myself, on a meager $3.33 per day. You may think you're just trying to save a buck, but it becomes a lifestyle. One I couldn't have imagined would bring so many beneifts to me and my family.
