Many years ago, too many frankly to remember, there was a television game show called Name That Tune. On it, contestants would compete to see who could identify a popular song hearing the fewest possible notes.
There was a moment of tension between Ashley and Preeti during the challenge. Kevin told Preeti she could use his already boiling water for asparagus. In the heat of the moment, Preeti accidentally put her asparagus in Ashley's water that was being boiled for gnocchi. Ashley slow cooker pork belly lost it! It was an understandable freak out, but she wouldn't listen to Preeti's apologies at all. We didn't know what food we would be eating as the chef, Shannon Bennett, decides the menu on the day. Once we are seated at our table we are asked if anyone has any food allergies or what people will and won't eat. In our group we had one person who is lactose intolerant, me, a few who are vegetarian and a major pork belly food network eater. Collard greens from the garden to the plate! A collard green dish can be intimidating to attempt to cook. Most people think of the southern style collards boiled with ham hocks and slow cooker pork belly slices cooking for 2 plus hours, a seemingly complicated recipe. Thursday night the Bacon Queen will be crowned at Johnny's Hall of Fame on Court Avenue. The night features free bacon samples from 6pm to 10pm and a vote for the woman that will represent the bacon lovers everywhere as their queen. That lucky woman will not only be the Bacon Queen but win slow cooked pork belly tickets to the festival as well. At Marcel's (2401 Pennsylvania Ave. NW, 202-296-1166), the $140 special menu is filled with delicious dishes: lobster egg with Osetra caviar, followed by diver scallops and braised slow cooked pork belly or English pea soup with veal meatballs. The third course is a baby arugula and fennel salad; then comes the main course of a New York strip steak or pan seared red snapper. Dessert is a choice between strawberry cheese cake and a chocolate mousse tower. Stir it often and keep cooking it until the gravy is thick enough. Stir in the herbs and add black pepper to taste. You will not need to add salt because the pancetta is salty enough.
